
For those of you who have been following, my indecisive mind can’t determine which of the Vosges Mo’s Bacon Bars I like more: Milk or Dark chocolate. In an attempt to make a decision, I have put the bars through a series of side-by-side tests to see how they measure up. This week’s test was in the spirit of Halloween: Candy Making.
I wanted to see how each of the bars could be used to create other chocolate confections. After flipping through countless candy recipes, I decided on something simple, classic, and delicious: peanut butter cups.
Peanut butter and Bacon Chocolate have a lot in common: they both rely on the interplay of salty and sweet, and mix crunch with creamy. Both are good to have around when you are hungry, yet can’t figure out what you’re craving. Individually, they are excellent.
Together, they’re euphoric.
Round 2: Mo’s Bacon Bar Peanut Butter Cups
Makes 5-6 mini cups
2 Mo’s Bacon Bars (Milk or Dark)
3 tsp peanut butter
mini cupcake liners
Directions:
1. Place chocolate in glass bowl and heat over small pot of water until melted.
2. Fill each of the mini cupcake liners with a teaspoon of the melted chocolate, and then use the back of the spoon to spread chocolate along the walls of the cupcake liner, so that all is covered in chocolate.
3. Refrigerate for 30 minutes or until chocolate is solidified.
4. Place 1/2 tsp. peanut butter into each chocolate covered liner. Use finger or spoon to spread out into a uniform layer.
5. Cover peanut butter with remaining chocolate until just at the top of the liner. Smooth top with the back of a spoon, and chill for 1 hour or until solidified.
Here are the results:
Both bars melted down very nicely. The chocolate becomes smooth and easy to work with.
Dark: The Mo’s Dark Bacon Bar peanut butter cup pops with flavor. The salt and bacon really stand out in comparison to the chocolate and the peanut butter. This is a much richer candy. All of the ingredients really hold their own. The experience is multi-dimensional and interesting. I don’t think I could eat more than half a peanut butter cup in one sitting.
Milk: The Mo’s Bacon Bar peanut butter cup is a much smoother, more classic experience. All of the ingredients blend more easily together, and create a singular sensation, instead of multiple experiences in one bite. I felt like I could eat more of these after finishing my half. The salt and bacon were much more subtle in this candy. The chocolate feels slightly overwhelmed by the peanut butter.
Both came out amazing. I highly recommend trying this for yourself.
